Spicy Cucumber Salad
Ingredients
- 1 large english cucumber, sliced about 2 cups
- 1 green onion, sliced
- 1 handful cilantro, chopped
- 1/8 cup peanuts, chopped optional
- 1/2 avocado, sliced optional
- sprinkle toasted sesame seeds optional garnish
Spicy Garlic Dressing
- 1/4 cup rice wine vinegar
- 1/2 tsp sesame oil
- 1 tsp sugar
- 1 tbsp sambal oleek sub sriracha
Instructions
- Make the dressing by whisking together all ingredients in a large bowl until the sugar dissolves. Set aside.
- Wash & cut the cucumber into thin slices. Slice the green onion. Chop the cilantro. Add all of these to the dressing. Toss well. Set aside to marinate for 5 minutes.
- Slice avocado. Arrange on top of the cucumbers.
- Chop the peanuts. Sprinkle as a garnish with additional cilantro leaves & toasted sesame seeds.
