Spicy Cucumber Salad

How much do you love a meal that comes together in under 15 minutes, has less than 10 ingredients, is made in one bowl, packs a punch with flavor, budget friendly & is also healthy? Well go ahead & fall in love with this quick & easy cucumber salad. Perfect for lunch, light dinner or even a side to your favorite spicy noods!

Spicy Cucumber Salad

A spicy, tangy, crunchy salad that you'll fall in love with!

Ingredients

  • 1 large english cucumber, sliced about 2 cups
  • 1 green onion, sliced
  • 1 handful cilantro, chopped
  • 1/8 cup peanuts, chopped optional
  • 1/2 avocado, sliced optional
  • sprinkle toasted sesame seeds optional garnish

Spicy Garlic Dressing

  • 1/4 cup rice wine vinegar
  • 1/2 tsp sesame oil
  • 1 tsp sugar
  • 1 tbsp sambal oleek sub sriracha

Instructions

  • Make the dressing by whisking together all ingredients in a large bowl until the sugar dissolves. Set aside.
  • Wash & cut the cucumber into thin slices. Slice the green onion. Chop the cilantro. Add all of these to the dressing. Toss well. Set aside to marinate for 5 minutes.
  • Slice avocado. Arrange on top of the cucumbers.
  • Chop the peanuts. Sprinkle as a garnish with additional cilantro leaves & toasted sesame seeds.

Notes

If you do not have sambal oleek available feel free to use sriracha or you could substitute with 1/2-1 tsp of red chili flakes.
The avocado is optional, but if making this meal as a lunch or dinner it does provide that healthy fat to help fill you up.
Toasted sesame seeds & the peanuts are optional, but their added crunchiness really balances the meal.
Don’t like cilantro? That’s too bad it’s wonderful. However, you can simply omit.
