Yes, even me, someone who attempts to do this for a living has days where cooking is not an option. When those times strike, you better believe I am making this Tomato Salad! Simple, full of flavor & highlights all the great flavors of spring & summer. It’s an absolute must!
She’s a beauty isn’t she? Those tomatoes are just so pretty! Which is why this Tomato Salad also works great for a gathering. Tell me this wouldn’t look great for an outdoor get-together? Such simple flavors would pair wonderfully with almost everything. Another great thing about this…it works great prepared in advance & as a leftover. Add a chunky piece of toasted sourdough & you are set!
This recipe does contain a spice blend that not everyone may have on hand. I don’t like to be that recipe creator that requires you to purchase items you’ll never use again, so let’s talk about Herbs de Provence. Herbs de Provence is a spice blend that is commonly used in French or Mediterranean cooking & is a mixture of thyme, basil, rosemary, tarragon, savory, marjoram, oregano, bay leaf & (if you are in North America) lavender & fennel. It can be used in many other dishes so if you’d like to try I think it is well worth the $3-5 you’ll spend. However, you could also substitute with za’atar, Italian seasoning, sumac or simply salt & pepper.

Carrot Salad with Sesame Miso Vinaigrette
Tomato Salad
Ingredients
- 1 pint assorted tomatoes (about 2 cups)
- 1/4 cup vegan feta sub vegan mozzarella
- 1-2 tbsp fresh basil leaves
- 1-2 tsp Herbs de Provence
- 1 tsp olive oil
- 1 tsp white wine vinegar or lemon juice
- salt & pepper to taste
Instructions
- Cut the tomatoes into bite-size pieces.
- In a large bowl combine the tomatoes, feta & basil. Gently toss to combine.
- Serve with a sprinkle of the Herbs de Provence & a drizzle of olive oil & vinegar/lemon.
