Matcha Mint Chip Smoothie

Ingredients

  • 1 frozen banana about 1 cup
  • 1 cup fresh spinach leaves sub kale
  • 1 tsp matcha green tea powder
  • 1/2 cup non-dairy milk of choice (non-flavored)
  • 1/2 cup ice
  • 1/2 cup water plus more if needed
  • 1/4 - 1/2 tsp peppermint extract
  • 1/4 cup avocado
  • 1 -2 tbsp cacao nibs or vegan chocolate

Instructions

  • Mix all ingredients except cacao/chocolate in a blender & puree until smooth. Adding additional water if needed to reach your desired consistency.
  • Pour smoothie into container & stir in cacao/chocolate, reserving some for garnish on top.

Notes

Matcha tea varies in its consistency of flavor & quality.  Depending on your brand (as well as your taste preference) you may want to add more.  Start with the amount described, blend, then taste.  If you want to add more do so a little add a time, blending with each addition.
Any non-dairy milk will work you just want it to be non-flavored as you may not want to be altering the taste of the smoothie.  If you prefer more of a milk based smoothie feel free to swap the water out & make it all non-dairy milk.  Just a matter of preference.
Let's talk spinach.  You can use fresh leaves or cooked/frozen spinach.  If you are doing that just reduce to 1/4 cup. 
Tip:  I freeze my fresh spinach leaves in their container, especially if it is getting close to that time where they will begin to go bad.  That way they are ready to go for smoothie making.
