Does your winter holiday celebration focus on breakfast or dinner? Both? No judgement here! I’m a morning person, so I want all the holiday eats as early as possible. So we are very much going to need a waffles recipe to start the day. To keep the flavors of the season strong why not make these eggnog waffles. Vegan of course! They are just the right mix of creamy, sweet with hints of nutmeg & cinnamon. Grab some syrup & drizzle it on or go all out “Elf” style & douse in sweetness. You do you! They say holiday calories don’t count. Pretty sure they do, but one day won’t hurt you.
To make this recipe you will need eggnog. Vegan eggnog that is. It has become much more accessible over the years (thank you for plant-based items reaching popularity). However, you may not be able to find any or heck maybe it’s July & you just want to make these, whatever the case I’ve got you covered with this Vegan Eggnog recipe.
Eggnog Waffles
Ingredients
- 1 cup vegan eggnog see notes
- 2 tbsp melted coconut oil sub vegan butter
- 1 cup flour
- 1 tbsp baking powder
- 2 tbsp sugar (coconut, brown or cane)
- 1/4 tsp nutmeg
- 1 pinch cinnamon
- 1 pinch salt
- cooking spray
Instructions
- Melt the coconut oil & add it to a large bowl with the eggnog, vanilla & sugar. Give it a stir to combine.
- Add the remaining ingredients to the bowl & stir until the batter is just mixed. Set aside.
- Heat your waffle maker & give it a spray with cooking oil. Pour the batter onto the waffle maker & cook for a few minutes (following manufacturer's cooking recommendations).Repeat this process until no batter remains.
- Serve with syrup, cinnamon sugar butter or any of your favorites waffle toppings.
