Do you ever have those days when putting forth any extra effort is, well, just not going to happen? I definitely do! Today was one of those day. I actually fell asleep sitting at my desk today. Just sitting there watching a (very boring) zoom meeting & closed my eyes, only to realize a couple minutes later that I had fallen asleep. Thankfully, the webcam was turned off! After a few more hours & a workout I eventually felt slightly rejuvenated, but still I knew when it was time to make dinner, it was either going to be made in under 10 minutes or it wasn’t going to happen. Thankfully, this Garlicky Greens Pasta ticked all the requirements off. Six ingredients, just under 10 minutes & so, so good!

Garlicky Greens Pasta

A completely delicious, satisfying meal all whipped up in just 10 minutes. This Garlicky Greens Pasta is must make dish!

Ingredients

  • 2 servings favorite shaped pasta see notes for water boiling tip
  • 1 bunch preferred greens (chard, kale, spinach)
  • 2 tbsp olive oil
  • 3-4 cloves garlic, roughly chopped
  • 1/2 – 1 tsp red chili flakes (start with 1/2 & add more if you like spicy)
  • vegan parmesan optional topping
  • salt & pepper to taste

Instructions

  • Fill a large pot with water (see tips in notes). Bring to a boil & add the pasta, cooking for about 7 minutes.
  • While pasta cooks, roughly chop the garlic & greens.
  • In a large pan over medium high heat, add the olive oil. Add the garlic & chili flakes, stir & cook for 1 minute. Add the greens & saute for 2-3 minutes.
  • When pasta is cooked, remove from the water & place directly in the pan with the greens, tossing & cooking for another minute.
  • Plate & sprinkle some vegan parmesan on top. Twirl those noodles & enjoy!

Notes

They say a watched pot never boils, so make it easier.  I simply fill the pot with hot water from the sink, cover with a lid & place on high heat.  Since the water is already near a boiling point it is ready in about a minute.
Choose your favorite greens for this recipe.  Chard (pictured here), kale, spinach would all work.  You only need to cook them for a few minutes so they just start to wilt.  You want them to maintain a bit of that natural texture & not turn into a soggy mess.
I’m a spicy fan, so I go for the full teaspoon of red pepper flakes.  If you prefer a little more mild, start with 1/2 tsp.  If you are not a fan of spicy at all, you can simply omit.  
Added bonus:  give a quick squeeze of lemon if you have it.  It gives a bright kick to the dish.  Totally delicious with or without.
