Key Lime Pie Pops

These Key Lime Pie Pops bring all the delicious flavors of key lime pie to popsicle form. I can’t decide yet if it was a good or bad idea to purchase these mini popsicle molds. I’m leaning into it being a good thing, even if it means I’m currently sitting on about 30+ popsicles in my freezer. One thing I do know for sure is these Key Lime Pie Pops are pretty damn delicious & super easy to make. Just 6 (possibly 7) ingredients & you are one step closer to this tasty frozen treat.

So what’s the deal with key limes? Smaller in size, with a thinner yellowish peel, key limes produce a slightly floral & less tart flavor than their traditional lime counterparts. Does it really matter? They do have a slightly different taste & due to the lower acidity levels in them they tend to be easier to bake with. That being said you have options. If you can find key limes in your grocery store give them a try to test them out. They are usually sold in 1 lb. bags & you may be thinking you won’t need that many but since key limes are smaller & contain more seeds, you actually will need more than a standard lime. If key limes are not accessible to you, feel free to use regular limes or use this hack by mixing half lime & half lemon juice. In the end it is really just how tart you want your pops to be. Taste the base mix & feel free to adjust to your tartness level.

Key Lime Pie Pops

Ingredients

  • 1/4 cup key lime juice see notes, sub lemon & limes, juiced
  • 3/4 c canned coconut milk (shaken to combine)
  • 6 oz condensed coconut milk
  • 1 tsp vanilla
  • 1/3 cup graham crackers
  • 1 tsp vegan butter, melted
  • optional: agave or sugar to taste

Instructions

  • Crush the graham crackers into crumbs in a food processor (or in a plastic bag crush with a rolling pin). Melt the butter & add to the crushed graham crackers. Stir to combine to get a wet sand texture. Set aside.
  • Juice the limes making sure no seeds are included (optional zest a few for added garnish if desired).
    In a large bowl or blender add the lime juice, coconut milk, condensed coconut milk & vanilla. Whisk or blend until combined. Taste & add additional sweetener such as agave or sugar based on your tartness preference.
  • Prepare your popsicle molds (see notes for order of next steps) by placing popsicle sticks in. Place some of the graham cracker mixture compactly into the base of the popsicle. Gently pour in the key lime mixture into the remaining portion of the popsicle mold. Add optional garnish of lime zest sprinkled over the top. Freeze for at least two hours.
  • Remove from popsicle molds when ready to serve.

Notes

Key Limes: Can’t find any? No problem you can sub a regular lime & maybe add the optional sugar substitute to mellow it out or you can mix 1/2 regular lime juice with 1/2 lemon juice.
Condensed Coconut Milk: This can be found at specialty grocery stores like Whole Foods or places that have more plant based products. You can also order directly from Amazon.
Popsicle Molds: This recipe uses mini silicone popsicle molds that lie flat to freeze. If you have larger molds you will want to double the recipe. If you have standing upright molds you alter step 3, by placing the key lime mixture in to nearly the top, add your popsicle sticks, then add the graham cracker mixture.
Taste as you go! Everyone has different taste preferences & tart levels really vary. Taste the key lime mixture & feel free to add a bit more sweetener if it is too tart or more lime juice if you really like to pucker up. Make it your own.
