Are you a fan of matcha green tea? I feel like you either like it or you don’t. Here’s the thing, it took me a handful of attempts to get on board. You just can’t beat the health benefits! It’s loaded with antioxidants, gives you all the alertness of caffeine without the crash & has been linked to many studies showing improved brain function & heart health. Still not convinced? Maybe you just need to get sneaky with it! Try adding it to baked items. You get the benefits without the herby taste. Better yet, try both with these Matcha Mint Waffles & sip a latte on the side!

Matcha Mint Waffles

Add these tasty waffles to your breakfast & brunch rotation.

Ingredients

  • 2 cups flour
  • 1 1/2 tbsp matcha green tea powder
  • 2 tbsp cane sugar
  • 2 tbsp baking powder
  • pinch salt
  • 2 cups dairy-free milk
  • 1 tbsp ground flax seeds
  • 3 tbsp water
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • cooking spray
  • favorite waffle toppings

Instructions

  • Heat your waffle maker to high heat.
  • Make a flax seed egg by combining the flax seeds & water. Stir well & set aside for about 5 minutes.
  • In a large bowl combine all the dry ingredients.
  • In a small bowl whisk together the wet ingredients, adding the flax seed egg.
  • Add the wet ingredients to the dry ingredients, slowly mixing until just combined.
  • Spray the waffle maker with a mist of cooking spray. Gently pour or scoop your batter onto the waffle maker, close the lid & cook for about 5 minutes or until the steam is no longer released from the waffle maker. Depending on the matcha used, colors may change as it cooks.
  • Repeat the waffle making process until all batter is used.
  • Serve with all your favorite toppings.

Notes

Matcha quality varies tremendously!  Don’t be concerned if the color of your waffles look different.  Some will be green, some not as much.  My matcha brand has added adaptogens so the pure green color is muted.
Waffle makers also vary so be sure to familiarize yourself with the heating & usage instructions.
Not a fan of mint?  No problem.  Just omit.  Add another tsp of vanilla extract.
Top with all your favorites!  Fresh fruit, vegan butter, syrup, coconut, vegan whipped cream, melted nut butter.  It pretty much all works.
End up with some leftovers?  Freeze them in a storage bag & then toast them up when you are ready to eat again.
