Pumpkin Spice Energy Bites

Feeling like you need a pick me up? Me too! Maybe it’s because I get up at the crack of dawn. Maybe it’s the morning workout sessions. Or maybe, just maybe the caffeine crash that happens after several cups of coffee. Regardless, by 10am I need a pick-me up. When that mid-day slump hits, it hits hard! Hit it back with these energizing pumpkin spice bites. A quick & easy recipe to whip up & pop in your mouth whenever you need that boost whether it is a quick breakfast bite, afternoon snack or even a dessert bite.

Pumpkin Spice Energy Bites

No better way to beat the afternoon slump than with these blissful bites of pumpkin spice!

Ingredients

  • 1/2 cup creamy almond butter
  • 1/3 cup pumpkin puree
  • 1/2-3/4 cup coconut flour see notes
  • 2 tbsp maple syrup
  • 1 tbsp pumpkin spice blend

Toppings (optional)

  • 1/3 cup dark chocolate
  • 1 tsp coconut oil
  • assorted nuts, spice, sugar

Instructions

  • In a food processor add the ingredients to a food processor & combine until it forms a thick, moist mixture that can be packed into a ball. See notes.
  • Roll the dough into balls. Move on to topping instructions or store in the refrigerator.
  • Melt the chocolate & coconut oil in the microwave for 30 seconds. Dip the energy bites in the chocolate to coat. You can also finely chop pecans & roll the bites in them or mix a bit of sugar & pumpkin spice & roll the dough in the mixture to coat.

Notes

Coconut flour soaks up moisture fast so you may need to add a bit more until it reaches the preferred texture.
There are so many options to garnish.  Chocolate, sugar & spice, nuts or simply eat plain.
These can be stored in the refrigerator for up to a week.
