As I write this it is Super Bowl Sunday! One of the best days of the year! Now this year is just a little different. First, my beloved Patriots finished the season weeks ago & are not playing in the Super Bowl, which is quite frankly just not something I am 1. used to and 2. okay with. Second, we are still in a pandemic & large gatherings are just not happening. Where’s the good news you might be asking? Well, we can still have all the good game day eats, starting with this Spinach & Artichoke Dip Pizza with Buffalo Honey Sauce. Yep, that will do it!

*I still get to cheer on Tom Brady (& Gronk). So even though there aren’t Patriots on the field these two former greats are always going to have my support! I mean hell I named one of my cats after Brady!

Even without the large gathering is it even a Super Bowl party if you don’t have pizza, or for that matter something with Buffalo sauce, or even a dip? This combines all of those things in one dish & is the perfect way to cheer on your favorite team, players or as many of you seemed to indicate when I asked you this week on Instagram what you were most excited for…the halftime performer.

Side note: we are going to need to convert you into true football fans!

If I can also just take a second to gush about this buffalo honey sauce. I’ve been on a hot sauce kick lately. Pretty much putting it on everything. When I went into the pantry to grab it I saw the bottle of vegan honey & just thought let’s make a sweet, spicy sauce to drizzle over the top. It is perfect paired with this Spinach & Artichoke Dip Pizza. I may have even dunked a slice (or two)!

Spinach & Artichoke Dip Pizza

This Spinach & Artichoke Dip Pizza with Buffalo Honey Sauce is the perfect mash-up of all your favorite game day eats in one bite!

Ingredients

  • 1 prepared pizza dough see notes
  • 1 cup artichoke hearts
  • 1/2 cup frozen spinach, cooked
  • 1/2 cup vegan mozzarella cheese
  • 1/3 cup vegan cream cheese
  • 1/4 cup vegan parmesan cheese
  • 1 tsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp crushed red pepper flakes plus more for garnish
  • salt & pepper to taste
  • 1 handful arugula optional garnish

Buffalo Honey Sauce

  • 3 tbsp vegan honey
  • 1 tbsp hot sauce
  • 1 tsp vegan butter, melted

Instructions

  • Preheat oven to 425° & line pizza pan/baking tray with parchment paper.
  • Prepare your pizza dough by gently pressing out into desired shape & sizes. Place on the baking tray.
  • In a food processor, add the artichoke, spinach, cheeses & spices. Taste & season with salt & pepper if needed. Spread the mixture onto the pizza dough so that it becomes your pizza topping. Place in oven & bake for about 20-22 minutes.
    For additional browning of your pizza crust, turn the oven to broil & place under the broiler for an additional 2-3 minutes watching closely so that it doesn't burn.
  • While the pizza cooks make the Buffalo Honey sauce by combining the ingredients & placing in the microwave for about 30 seconds. Stir well. You want a thin sauce you can drizzle all over.
  • Remove the pizza from the oven. Top with a handful of arugula, squeeze of lemon juice & drizzle of the Buffalo honey sauce.

Notes

I wanted this pizza recipe to be quick & easy so I have opted for a pre-made pizza dough.  Feel free to make your pizza dough from scratch if you so choose.  Usually when I am making pizza it is fulfilling a craving & I just don’t have the 3 hours to spare to have the dough rise.  Many grocery stores will sell a ball of dough in their bakery section or go to your favorite pizzeria & ask if they will sell you the dough.  You can freeze it & then thaw it out on the day you want to make your ‘za.
Shape your dough however you want.  Circle, square, amoeba-like, mini or large.  There really is no wrong way to do it.
The lemon used in the recipe may sound strange but it adds a fresh kick to the pizza & balances well with the other ingredients.  Highly recommend!
Serve with additional Buffalo honey sauce on the side & vegan ranch if you prefer.
