Spirulina Kale Smoothie

Smoothies for life! In a jar, in a glass, loaded up in a bowl. However you do it I am here for it! I mean first of all, how do you top the easiest cooking method of blend? You don’t (ok maybe toast, but seriously blend is pretty friggin’ easy). Second, how else can you combine fruits, vegetables, nuts, seeds, herbal powders, you name it all in one meal? Third, if you do just a little prep work by freezing those fruits & veggies that are about to go bad you can reduce your food waste. Win, win, win!

Now let’s talk spirulina. Haven’t heard of it? Well, it’s an organism that grows in water & is a cyanobacteria that is in the algae family. Sound scary? Don’t let the big words fool you. It is often referred to as the single most nutritious food we have. It is packed with nutrients like iron, vitamin B1, B2, copper & contains healthy omega-fats & a highly efficient source of protein. Now you may be thinking, great another healthy/vegan recipe that has me purchasing insane ingredients I’ll never use. If you don’t think you’ll make enough smoothies than yes, this may not be the product for you & that’s okay. However, if you are wanting to start incorporating more smoothies in your eating plan or already do it is so worth it.

Spirulina Kale Smoothie

A sneaky good way to add in some nutrients to your morning!

Ingredients

  • 1 frozen banana see notes
  • 2-3 frozen cauliflower florets
  • 3-4 kale leaves sub spinach
  • 1/4 avocado
  • 1 tsp hemp seeds
  • 1 tsp spirulina powder
  • 1 tsp vanilla extract
  • water
  • 1 date (pit removed) optional (see notes)

Instructions

  • Add all ingredients except water to a blender. Blend on high speed streaming in the water to reach desired consistency. Serve.
    *If using a single serving blender add just a bit of water to get going. Then stop & add more as needed until you get the hang of how much water you may need depending on your consistency preference.

Notes

Tips on freezing bananas:  I like to freeze my bananas once they are extremely ripe.  The longer they ripen the sweeter they will get.  That natural sweetness will work to disguise the taste of any added veggies you may add to your smoothies without feeling like you have to add an additional sweetener.  Simply slice the super-ripe banana into bite size pieces.  Lay them flat on a tray (that will fit in your freezer) & let them freeze for a few hours.  Since these overripe bananas can be a bit mushy this allows them to harden without becoming one giant frozen pile of banana mush.  Then transfer them to a freezer-safe container to store until you are ready to make your smoothies.
Which greens?  I tend to use lacinato kale but spinach or curly kale works too.  Added tip, freeze your kale & spinach.  If you make as many smoothies as I do this is a must!  How many times have you bought kale or spinach & it went bad before you could use it all?  Freeze it!  Once you do just add a frozen handful to the blender.  So easy!
