Sugar & Spice Plums

A dessert is healthy when it’s fruit, right? How else do you get in all the fruits they recommend you eat per day? These Sugar & Spice Plums are a great way to ensure you hit those fruit goals, healthy or not. There I said it, just because something is vegan doesn’t mean it is healthy. But to me healthy can be all things as long as you do it with moderation and balance. And let’s be honest, a juicy, ripe plum is great all on it’s own, but… roasted with a little sugar and spice? Well you know wat they say, it makes everything nice!

In all seriousness, these Sugar & Spice Plums are so easy to make. Turn on the oven, cut the plum in half, sprinkle with sugar & spice & cook. It’s mistake proof! Now these plums can be served all on their own & be simply delicious. If you want to take it up a notch (which I highly recommend) add a scoop of ice cream, some sliced almonds, added pinch of spices & then spoon over some of the juices from the plums. It’s so good!

Sugar & Spice Plums

A super simple & tasty dessert

Ingredients

  • 2 plums
  • 1-2 tbsp brown sugar
  • 1/2 tsp ground cinnamon (plus a pinch for garnish)
  • 1/4 tsp cardamom (plus a pinch for garnish)
  • 2 tbsp sliced or crushed almonds sub pistachios, macadamia or hazelnuts
  • 2 scoops vegan vanilla ice cream optional

Instructions

  • Preheat oven to 400° & line a baking tray with parchment paper (or foil)
  • In a small bowl add the brown sugar, cinnamon & cardamom. Stir to combine.
  • Cut the plums in half & remove the pit. Place the plums on the baking trays, cut-side up. Sprinkle the sugar mix onto each plum. Place in the oven & cook for 20-22 minutes.
  • Serve the plums with an optional scoop of ice cream, nuts & pinch of spices.
    You should also have some plum juice that cooks out on the baking tray. Grab a spoon and pour it over the ice cream for an added touch of color & fruity flavor.

Notes

Plums:  Any variety of plums will work for this recipe.
Spices:  Don’t have any cardamom?  No problem, stick with the cinnamon & it will taste great!
Ice Cream:  Try to stick with a neutral vanilla, coconut or maybe even a butter pecan.  You do you, but I’m thinking some flavors like a mint chip are better left on their own.
