Sometimes you feel like an adult & sometimes you just don’t. Then there this the time you try to meld the two together. That’s how I feel about toast. In it’s standard form it seems simple & childlike. There is no real cooking required. You simply push a button & it’s cooked. Slather on some butter (vegan of course) or peanut butter, maybe some jam. It’s like the first thing your parents let you do all on your own in the kitchen. But then you grow up & have all kinds of cooking techniques & recipes at your disposal. You may not call yourself a chef, or maybe you do (if so good for you!) but you’ve reached a point where a simple toast is no longer deemed an acceptable option. Listen, I don’t make the rules! Then along came avocado toast & we all got to feel like a kid & a grown up at the same time.
It’s been several years & it seems like avocado toast isn’t going anywhere. It is so simple! And if we really think about it, not any different from the classic toast. The only difference is we add an avocado, which for whatever reason costs an exorbitant amount of money when added to any menu item. Seriously, why does it cost so much to add avocado? I may turn into that old lady that brings food items/condiments in her purse when dining out. Can you imagine? I just whip out an avocado & a knife, start slicing. Something to consider.
Now that avocado toast is so mainstream I am constantly looking for ways to keep it interesting. Don’t get me wrong, I love avocado. Absolutely love! Sometimes you just need a bit more. The great thing is that you can top avocado toast with almost anything. Which is great because it means the options are infinite. So now we can adult a bit, while still feeling like a kid. Kimchi, cilantro & sesame? Feta, mint & preserved lemon? Roasted corn, pickled red onion, chili powder? Pretty sure 4 year old me wasn’t eating any of that. Wish she would have though!
