Banana Bread

I know I can’t be alone in this. We’ve all done it, right? We bought the bananas. We were going to eat them all. They weren’t going to go bad. Don’t you worry, we promised, we will use them all. Then they sat there. One brown spot, then another, and another, and another. And then we must decide to freeze for future smoothies or banana bread. Well, if there is time, it is always banana bread.

Warmed banana bread with a little fruit & a little vegan butter or nut butter. Such a good start to the day!

The great thing about banana bread is how versatile it is. Add your favorite toppings or add-ins. Like chocolate? Throw in chocolate chips. Love a crunchy nutty bite? Add some walnuts. A fruity mix? Toss in some blueberries or strawberries. What about chopped dates & coconut? Or simply spice it up with some cinnamon.

Vegan Banana Bread

All the bananas! All the banana bread! This easy recipe will have a warm slice of banana bread ready for you to enjoy in no time!

Ingredients

  • 4 overripe banana about 2 cups
  • 1/4 cup brown sugar
  • 1/4 cup coconut oil, melted
  • 1/4 tsp ground cinnamon
  • 1 pinch ground nutmeg
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup optional toppings or add-ins nuts, chocolate, fruit

Instructions

  • Preheat oven to 350° & line a loaf tin with parchment paper.
  • In a large bowl, add the bananas & mash well. Some chunks are okay but you want them to be pretty smashed.
  • Add the sugar, melted coconut oil, cinnamon & nutmeg. Stir well to incorporate.
  • Add the flour, baking soda & baking powder. Stir well.
    *If adding any additional ingredients mix in now.
  • Pour the batter into your baking tin. (Add additional toppings if doing so). Place in oven & bake for 40 minutes. Check that bread is done by inserting a toothpick in the center & if it comes out clean when removed the bread is ready. If not, continue to bake in 5 minute increments until done. Remove from oven & let cool.

Notes

You want your bananas to be super ripe. The browner the better. The more the bananas ripen the more natural sweeteners they produce & the less sugar you need to add. If your bananas are just a little spotty you may want to add 1/4 cup ore sugar & maybe 1/2 tsp vanilla extract.
Bread tin sizes will vary. As a result cooking times will also vary. Start with 35 minutes & begin to check in 5 minute increments.
Want to make oil free? You can swap the coconut oil for unsweetened applesauce.
Want additional toppings or add ins? Go for it! Add your favorite items either to the batter, as a topping for the crust or both!
