Blueberry Scone Smoothie

Some mornings there just isn’t the time to make a home-made pastry. And yet, a pastry would really hit the spot right? If you too run into this predicament follow my lead & make this Blueberry Scone Smoothie. Fresh fruit, some fiber from rolled oats & added protein from hemp seeds & almond butter. Breakfast in under 5 minutes that fills you up & reminds you of one of your favorite pastries. A win, win to start the day!

Fingers crossed for both of us that we do have some extra time one morning. If that’s the case I think it’s in both of our interests to make the muse for this smoothie, these Blueberry Scones. Plenty of blueberry, a touch of almonds & just the right amount of sweet. A perfect way to enjoy a leisurely morning!

Blueberry Scone Smoothie

Breakfast in under 5 minutes! A healthy way to start the day but tastes just as decadent as that sweet pastry treat!

Ingredients

  • 1/2 cup frozen or fresh blueberries
  • 1 frozen banana about 1 cup
  • 2-3 frozen cauliflower florets optional
  • 1 medjool date, pitted
  • 1/4 cup rolled oats
  • 1 tbsp hemp seeds
  • 1 tbsp almond butter
  • 1 drop vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/2 cup water sub non-dairy milk of choice
  • optional ice

Instructions

  • Add all ingredients to a blender & puree until smooth for about 2 minutes. You may need to stop, scrape down the sides & continue to blend. Add more water if needed to reach your preferred smoothie thickness.
  • Serve in your favorite smoothie container. Remember to grab a straw & lid if taking it on the go.

Notes

The cauliflower is optional.  It’s a sneaky good way to throw in some added fiber & vitamin C.  I promise you won’t feel like you are drinking cauliflower.
A tip for freezing your bananas.  Let them ripen as much as you can.  The more time they have to ripen the sweeter they become.  This way you don’t have to add any extra sweeteners to your smoothies.  Slice the bananas into bite size pieces & lay flat on a tray.  Place in the freezer for about a few hours.  Once frozen, transfer to an airtight container.  Freezing them this way will ensure you don’t have a mashed mess to deal with.
Prefer a smoothie bowl.  Serve up in a bowl & top with fresh blueberries, almonds & your favorite granola.
