Sweet Greens Smoothie Bowl

Sweet Greens Smoothie Bowl

I feel like there are two kinds of people. Those that can eat smoothie bowls year round and those that will only eat them when the warm weather hits. Which category do you fall in? No judgement here. We welcome all smoothie bowl types. I’m an all year long smoothie lover! Warms days they just hit the spot, do they not? Cold days, well there may just be a little cold shiver to the body. I may have to grab a hoodie, but in the end it is worth it! Breakfast made in 5 minutes & it has all the fruits & veggies for a nutritious day. A little chill can’t keep me away from that!

So many times when I make a smoothie or a smoothie bowl it’s a bit of a flavor gamble. I never know what I am going to toss in there. There’s almost always frozen banana but after that who knows what I might add in the blender. It always just comes down to what I have on hand, what’s about to go bad (90% of the time) and how do I sneak in some added nutrients. That is exactly how this bowl of deliciousness came about. I knew I had a kiwi & yellow dragon fruit that needed to be used, but then I also had collard greens. Those three things might be great on their own, but together? Turns out that with a bit of mango, avocado & those sweet frozen bananas it worked out pretty great! Grab a spoon, even if it’s cold out! I promise you are going to like it!

Ingredients

  • 1 frozen banana about 1 cup
  • 1/2 cup frozen mango
  • 1 cup collard greens sub spinach or kale
  • 1/2 small avocado about 1/4 cup
  • 1 tbsp hemp seeds optional
  • 1/4 – 1/2 cup water sub non-dairy milk
  • favorite toppings – blueberries, kiwi, dragon fruit, coconut (shown)

Instructions

  • Slice your fruit toppings into desired bites. Set aside.
  • To a blender add the smoothie ingredients except the water. Blend while slowly streaming in the water until smooth. You may need to stop to scrape down the sides. Add more water if needed.
  • Serve in a bowl with your favorite toppings.

Notes

Feel free to sub your favorite greens for the collard greens.  Spinach or kale would work nicely.
Freeze your bananas once they have reached prime sweetness.  The more ripe they get the sweeter they become & then you will not need to add any additional sweeteners.
Don’t have any hemp seeds?  You could add chia seeds or ground flax seeds too.
Enjoy!!!!
