Candied Orange Granola

Don’t judge me, but I am currently putting this on everything! Also, maybe just grabbing it by the handful & snacking on it! Whatever! It’s delicious! I have no regrets. Thankfully (or tragically – that has yet to be decided) I made this in bulk so I can snack on this for quite awhile, which I am 100% happy about.

This granola is perfect topped on fresh fruit, yogurt, smoothie bowls, peanut butter toast. Endless possibilities! Plus those candied oranges are everything!

Candied Orange Granola

A completely delicious, addicting topping or snack!

Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup favorite nuts & seeds
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup hemp seeds
  • 1 tsp cardamom
  • 1 zest of one orange
  • 1/4 cup maple syrup or agave
  • 1/4 cup creamy tahini
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1 tsp fresh orange juice

Candied Orange

  • 1 large orange, very thinly sliced keep rind on
  • 1/4 cup coconut sugar sub cane sugar
  • 1/4 tsp ground cinnamon
  • 1/4 tsp cardamom

Instructions

  • Preheat oven to 300° & line a large baking tray with parchment paper.
  • In a large bowl combine all the granola ingredients. Mix well until combined.
  • Transfer the mixture to the baking tray, spreading it out & pressing mixture firmly into the tray.
  • Bake for 35-40 minutes.
  • Remove from the oven & let it cool completely. Do not touch it – see notes.
  • Once it has completely cooled & hardened you can mix the candied oranges & break it up in to chunks. Store in an airtight container.

Candied Orange

  • Preheat oven to 200° and line a baking tray with parchment paper.
  • Wash your orange & pat dry.
  • Slice the orange into very thin pieces. If you have a mandolin feel free to use it to get consistent thin slices.
  • Toss the orange slices with the remaining ingredients so that each slice is coated in the sugar spice mixture.
  • Lay the slices flat on the tray & bake for 2-3 hours. Times vary based on the thickness of orange slices. The thinner the slice, the less time needed.
  • Remove from the oven & let them cool completely. They will harden into crispy rounds once cool. Add to the granola or eat as a sweet snack.

Notes

This is a plan ahead recipe as it does take time.  Don’t be scared by the cooking time.  You just place in the oven & do other things.  The oranges just need to slow cook in order to dehydrate. If you have a dehydrator, lucky you, go for it.  Once they have cooked they do need some time to cool & they will harden up.  Eat them completely, rind and all!
Please, please, please let the granola cool completely.  In order to achieve those large crunchy bits the coconut oil needs to firm up.  If you don’t care about the texture, dig in.
You can use any combo of your favorite nuts & seeds. I used almonds, pecans, pumpkin seeds & cashews.
Put this on your favorite smoothie, nut butter toasts, yogurt & fresh fruits or simply eat it in a bowl with your favorite nut milk.  Snack on it to your hearts content!
