Tahini Chocolate Sea Salt Cookies
Ingredients
- 1 cup sugar coconut sugar or cane sugar
- 1 cup creamy tahini
- 1/2 tbsp vanilla
- 1 cup oat flour see notes
- 1 tsp baking soda
- 1 pinch salt
- 1/4 cup cold water
- 1/2 cup chocolate chips or bar (chopped)
- sea salt optional sprinkle to garnish
Instructions
- In a bowl, cream together sugar, tahini & vanilla.
- Add in all the dry ingredients, stirring to combine.
- Add the cold water (make sure it is cold), stirring until well combined.
- Add in the chocolate.
- Place in the freezer for 10 minutes to firm up.
- Preheat oven to 350°. Line a baking tray with parchment paper.
- Scoop out dough into tight mounds on the baking tray.
- Bake for 10 minutes. Remove from oven & give the tray a gentle tap on your counter to get those desired ripples of chewiness. Return to the oven & bake for an additional minute or two, watching closely.
- Remove from the oven to let cool. Sprinkle each cookie with a pinch of sea salt.
