Cauliflower Gyros

Do you ever get an intense craving for a certain food? Is it ever a cucumber? Yeah, probably not, but hear me out. I am currently on a huge cucumber kick. They are going in my smoothies, my salads, my dipping vessel of choice for hummus & they work great to ease those puffy eyes after a day of staring at a computer. Why am I going off on cucumbers for a cauliflower gyro recipe? Tzatziki of course! A gyro just isn’t complete without that creamy sauce all over it.

But a tzatziki sauce made from hemp seeds? Yep, you heard that right, hemp seeds. Once blended with the tahini & lemon juice it gets so creamy & then you fold in those fresh cucumbers & it’s heavenly! And did I mention all those fresh veggies & herbs yet? Roasted cauliflower with fresh tomatoes, onion & more of those cucumbers. Plus, it’s all rolled up in a soft, pillowy piece of flatbread. Perfect for a lunch, dinner or even rolled up on the go. I mean it did start as a street food right?

Added bonus points if you make some Greek-Style Lemon Potatoes to go with or even stuffed inside the gyro.

Cauliflower Gyros

Ingredients

  • 4 flatbread
  • 1 head cauliflower, cut into florets
  • 1/2 cup cucumber sliced
  • 8 whole leaves favorite greens whole leaves or chopped
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup tomato, sliced
  • 1/3 cup vegan feta, crumbled
  • 1 tbsp fresh dill

Hemp Seed Tzatziki

  • 1/2 cup hemp seeds
  • 1 tbsp tahini
  • 2 cloves garlic
  • 1 medium lemon, juiced
  • 3 tbsp water
  • 1/2 tsp cumin
  • salt & pepper to taste
  • 1/2 cup cucumber, diced
  • 1 tbsp chopped fresh herbs dill, parsley, mint

Instructions

  • Preheat oven to 400°.
  • Prepare the cauliflower by chopping into bite-size florets. Arrange on a baking tray & roast for 30 minutes. Remove from oven.
  • While the cauliflower roasts prepare the tzatziki sauce. In a blender add the lemon, hemp seeds, garlic, tahini, water, cumin, S&P. Blend until smooth. Dice the cucumber & roughly chop the herbs. Add the cucumber & herbs to the blended mixture, giving it a good stir to mix. Place in the refrigerator for about 10-15 minutes.
  • Prepare your veggies by slicing & chopping as needed.
  • Optional: Warm your flatbread based on package instructions
  • Arrange the gyros by layering flatbread with your greens, roasted cauliflower, tomatoes, cucumber, onions, feta & herbs. Drizzle the tzatziki sauce on top & serve on the side for added dipping.

Notes

Make sure to read the ingredients listed on your flatbread packaging. Not all are vegan so check closely.
I prefer to use English cucumbers for this recipe. They have a better texture & less seeds. However, any type of cucumber will work so use what you have available.
When cooking the cauliflower you can drizzle a bit of olive oil & sprinkle with some added seasoning like cumin, garlic powder, oregano or za’atar. Or you can simply roast all on its own as I did.
