What’s your go-to coffee order? Mine is a dirty chai latte. Usually extra dirty! So the idea of doubling down on both my morning coffee & morning nibbles was a no-brainer. And can I just say the aromas in the house right now are simply amazing.
Not a big coffee addict? No problem. When I decided to create this recipe I made two versions. One, I added espresso to the muffin batter to make it like a chai latte. Which I loved! But since I may end up with a non-coffee drinker eating a few of these, I decided to make the chai muffin recipe below & made the dirty chai glaze to drizzle on as an added treat. Highly recommend!
Chai Muffin
Ingredients
- 2 cups flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp ground ginger
- 1/2 tsp cloves
- 1/2 tsp allspice
- 1/8 tsp salt
- 1 cup unsweetened applesauce
- 1/2 cup dairy-free milk
- 1/2 cup refined coconut oil, melted
- 2/3 cup sugar (cane or coconut)
- 1 tbsp maple syrup
- 1 tbsp black tea of choice optional
Dirty Chai Glaze
- 1/4 cup powdered sugar
- 1 tsp espresso or black coffee
- 1 tsp black tea of choice optional
Instructions
- Preheat oven to 375°. Spray a muffin tin with cooking spray or line with baking cups.
- In a large bowl mix together the applesauce, oil, sugar, milk, maple syrup & tea.
- Add the remaining dry ingredients & mix until just combined.
- Pour or scoop batter into muffin tin. Place tray in oven & bake for 20-23 minutes. Check to see if the muffins are done by inserting a toothpick into the center of the muffin. If it comes out clean you are done. Remove from oven to cool.
- If making the dirty chai glaze, whisk together all ingredients until all lumps are removed & you are left with a syrup-like consistency. Drizzle on the muffin tops.
