Dirty Chai Muffins

What’s your go-to coffee order? Mine is a dirty chai latte. Usually extra dirty! So the idea of doubling down on both my morning coffee & morning nibbles was a no-brainer. And can I just say the aromas in the house right now are simply amazing.

Not a big coffee addict? No problem. When I decided to create this recipe I made two versions. One, I added espresso to the muffin batter to make it like a chai latte. Which I loved! But since I may end up with a non-coffee drinker eating a few of these, I decided to make the chai muffin recipe below & made the dirty chai glaze to drizzle on as an added treat. Highly recommend!

Chai Muffin

Get ready to double down each morning with this chai spiced muffin with a dirty chai latte glaze. Pairs perfect with, you guessed it, a chai latte.

Ingredients

  • 2 cups flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp ground ginger
  • 1/2 tsp cloves
  • 1/2 tsp allspice
  • 1/8 tsp salt
  • 1 cup unsweetened applesauce
  • 1/2 cup dairy-free milk
  • 1/2 cup refined coconut oil, melted
  • 2/3 cup sugar (cane or coconut)
  • 1 tbsp maple syrup
  • 1 tbsp black tea of choice optional

Dirty Chai Glaze

  • 1/4 cup powdered sugar
  • 1 tsp espresso or black coffee
  • 1 tsp black tea of choice optional

Instructions

  • Preheat oven to 375°. Spray a muffin tin with cooking spray or line with baking cups.
  • In a large bowl mix together the applesauce, oil, sugar, milk, maple syrup & tea.
  • Add the remaining dry ingredients & mix until just combined.
  • Pour or scoop batter into muffin tin. Place tray in oven & bake for 20-23 minutes. Check to see if the muffins are done by inserting a toothpick into the center of the muffin. If it comes out clean you are done. Remove from oven to cool.
  • If making the dirty chai glaze, whisk together all ingredients until all lumps are removed & you are left with a syrup-like consistency. Drizzle on the muffin tops.

Notes

The addition of the black tea is optional. I love chai, so the more the better & since these muffins will be consumed alongside a chai latte I know I will already have some chai on hand. Feel free to use whatever black tea you have available…masala, rooibos.
The dirty chai glaze really takes the muffins too the next level. Preferably, drizzle over each muffin just prior to serving. Over time the glaze will soak into the muffin so it performs best when added as you consume.
Muffin tins sizes vary so depending on how big or small you make these you may need to adjust the cooking time.
Store leftovers in an air-tight container for about a week.
