Fresh Citrus Salad

Crisp, light, tangy and refreshing! Some days you just need a fresh citrus salad to give you that extra pep. This salad is super simple to make, loaded with vitamin C, vitamin K, fiber & protein. So whether you choose this salad as your main dish, side, lunch or dinner it’s got you covered.

Fresh Citrus Salad

A light, refreshing, citrus salad to add some pep to your day!

Ingredients

  • 3 cups favorite greens, chopped kale & arugula shown
  • 1 medium favorite citrus such as orange/tangelo/grapefruit about a cup
  • 1 cup quinoa
  • 1 3/4 cup water
  • 1/2 cup fresh blueberries
  • 1/4 cup almonds, pistachios or both
  • 1 avocado, sliced optional

Citrus Vinaigrette

  • 1 small shallot, diced
  • 1/2 cup apple cider vinegar
  • 1/3 cup olive oil
  • 1 tbsp dijon mustard
  • 1 tsp zest of citrus used
  • 2 tbsp juice of citrus used
  • 1 tsp lemon zest
  • 2 tbsp lemon juice

Instructions

  • Prepare the quinoa by placing the quinoa and water in a medium size lidded saucepan over medium heat. Bring to a boil. Cover & reduce heat to low, cooking for 15 minutes. Remove from heat & let the quinoa sit for another 5 minutes with the lid on. Give it a gentle stir to fluff the quinoa.
  • While the quinoa cooks, make your vinaigrette by whisking all the ingredients together until fully combined. Set aside.
  • Wash your greens & pat dry. If using kale, destem & massage. Tear & cut into bite size pieces.
  • Slice the citrus in either rings or segments, removing the rind.
  • Add the salad ingredients to a large bowl & toss well to mix the ingredients.
  • Serve the salad with the vinaigrette on the side. Drizzle on top as desired.

Notes

The great thing about this salad is you can customize it to your favorites. So pick your favorite greens, citrus & nuts.
If you are hoping to have some for leftovers make sure to choose a heftier green like kale & serve the vinaigrette on the side to dress. Otherwise, you will end up with a sad desk lunch the next day & nobody wants that!
