Marinated Tofu Feta Bites

Let’s talk apps for a minute. Is it just me or do you feel like most appetizers feature cheese in on way of another? Be it a dip, a slice, a ball, a log, or a board it’s there front & center. So how does a plant-based eater cope? By adapting! So adapt we shall with these marinated tofu feta bites.

Am I trying to convince you that this will replicate cheese? Hell, no. I know it’s not cheese. What I also know is that the texture, the marinade & protein is all there (in fact more protein, but that’s a discussion for another time). Pair this marinated tofu with cucumber, tomato, olive & greens for great version of a Mediterranean salad. A quick, light & flavorful bite perfect to start off any extended meal. Bonus points: add these cheese to a salad the next day.

Marinated Tofu Feta Bites

Ingredients

  • 1/2 -1 block extra firm tofu pressed to remove moisture
  • 1-2 cups olive oil
  • 1 tsp red pepper flakes
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1 tsp dried basil
  • 1-2 cloves garlic
  • salt & pepper
  • 10 slices cucumber
  • 5 cherry tomatoes, halved
  • 10 olives optional
  • 1/4 cup microgreens or arugula optional

Instructions

  • If possible make a day in advance as the tofu will absorb more flavor.
    Remove tofu from its container & press well to remove moisture. Cut into bite size pieces.
  • In a glass storage jar add the tofu, spices & olive oil. Cover with lid & give a gentle shake to ensure that the tofu is covered in oil. Set aside in refrigerator.
  • When ready to prepare as an appetizer, slice cucumbers & tomatoes. Build the appetizers either on a skewer or on a dish. Drizzle a bit of the additional marinade oil.

Notes

Make sure to use extra firm tofu.  You want the shape to hold & the softer tofu will not do that.
Add an olive & some microgreens/arugula (not pictured here as we have an olive hater in this house & he is very vocal on the matter).
The longer this can marinade the better.  Store any leftovers in the refrigerator for about a week.  Add to your favorite salads & power bowls.
