Matcha Mint Chip Smoothie

Hands down this is one of my favorite smoothies! This Matcha Mint Chip Smoothie gives a boost from the matcha, a refreshing kick from the mint & some sneaky good greens. Oh, did I forget to mention the chocolate? Yep, that’s right chocolate! It’s like a mint chocolate chip ice cream with a boost! This smoothie works great to start your day or a quick late lunch to beat those afternoon slump. Grab a straw & slurp away!

Are you on team mint chip? I didn’t realize how divisive this flavor profile is. It appears you either love it or think it tastes like toothpaste & chocolate. If you lean toward the toothpaste side, my guess is you are no longer reading this. If you are on team mint chip, then you must make this!

Now if you aren’t a fan of matcha I got you! You do not taste it at all! The mint is the predominant taste so the matcha really just slyly sneaks in to give you that added boost of energy without that post caffeine crash.

Smoothie or smoothie bowl? You choose. I’ve done both. If you go bowl top with additional items like coconut, granola & off course a little extra chocolate!

  • 1/2 cup non-dairy milk of choice (non-flavored)
  • 1/2 cup ice
  • 1/2 cup water plus more if needed
  • 1/4 - 1/2 tsp peppermint extract
  • 1/4 cup avocado
  • 1 -2 tbsp cacao nibs or vegan chocolate

Instructions

  • Mix all ingredients except cacao/chocolate in a blender & puree until smooth. Adding additional water if needed to reach your desired consistency.
  • Pour smoothie into container & stir in cacao/chocolate, reserving some for garnish on top.

Notes

Matcha tea varies in its consistency of flavor & quality. Depending on your brand (as well as your taste preference) you may want to add more. Start with the amount described, blend, then taste. If you want to add more do so a little add a time, blending with each addition.
Any non-dairy milk will work you just want it to be non-flavored as you may not want to be altering the taste of the smoothie. If you prefer more of a milk based smoothie feel free to swap the water out & make it all non-dairy milk. Just a matter of preference.
Let’s talk spinach. You can use fresh leaves or cooked/frozen spinach. If you are doing that just reduce to 1/4 cup.
Tip: I freeze my fresh spinach leaves in their container, especially if it is getting close to that time where they will begin to go bad. That way they are ready to go for smoothie making.
Enjoy!!!!!!
