If this Mango Star Smoothie doesn’t add a burst of good vibes to your morning I’m not sure what else will. That bright, sunshiny yellow just wakes you up. A little sweet, a little sour & ice cold to wake you up. Plus, can we talk about how cute starfruits are! Simply adorable!

Carambola, or starfruit as it is also known, is a tree fruit originally found in Southeast Asia. Named for the five points that form a star, this fruit is worth adding to your arsenal when in season. It is loaded in vitamin C, contains fiber & flavonoids that seems to aid in the reduction of inflammation according to some studies. They taste a little sweet & a little sour & can be eaten whole (minus the seeds). As they ripen & turn yellow-orange they lose some sour & gain a little sweet.

Due to the fact that they can be eaten whole they are super simple to prepare. Especially since in this case we will be adding to a smoothie. I like to trim down the rind/peel a bit. I slice off each end & then take a knife & run it along the length of each of the five point’s spines. These parts tend to be a little tougher than the others, but can be consumed if you want to save a step. Then I cut into star shaped slices & remove the seeds from each slice. Snack on a slice, add to the smoothie & most definitely garnish!

Ingredients

  • 1/2 cup frozen mango
  • 1 frozen banana
  • 1 starfruit
  • 2-3 florets frozen cauliflower
  • 1/2 tsp turmeric
  • 1/2 cup ice
  • splash of water to reach desired consistency

Instructions

  • Prepare the starfruit by trimming, cut into star shaped slices & remove seeds. Reserve a slice for garnish.
  • Add all the ingredients to a blender. Blend on high for 1-2 minutes until smooth, adding more liquid as needed to reach preferred consistency.
  • Serve with a garnish of starfruit & any other preferred toppings.

Notes

Starfruit, or Carambola, can be eaten whole minus the seeds.  While this is the case, the ends & spine of each “star point” can be a little tough so I trim then down.  Simply slice of each end & then run a knife down the length of each spine to remove the spine.  Then cut into star shaped slices & remove the seeds in the center of each star.
Sneaking in added cauliflower to smoothies is a great way to boost fiber content.  I always keep frozen, cooked spinach on hand for just this reason.  Either buy the frozen bags in your store or you can buy a head of cauliflower & steam the florets then store in a freezer safe container & just pop in a a couple of florets to your smoothies.
