Mixed Berry Galette

Berry season is in full effect! What better way to highlight their sweet, juiciness than this delectable dessert. Even better, the recipe uses a store-bought pastry, making it quick & easy to whip up in no time. Did you know that frozen puff-pastry is vegan? Me either. So grab some dough & your favorite berries & enjoy these sweet summer treats.

Mixed Berry Galette

Harvest the best of summer's berries with this simple & delicious treat!

Ingredients

  • 1 sheet frozen puff pastry thawed
  • 1 1/2 cups favorite berries
  • 1 tbsp cornstarch or arrowroot powder
  • 1/3 cup cane sugar
  • 1 tsp cinnamon
  • 1 tbsp dairy-free milk
  • 1/2 tsp each sugar spice blend (cinnamon, sugar, ginger & cardamom)
  • optional: vegan ice cream or whipped cream

Instructions

  • Thaw out frozen puff pastry, about 30 minutes on the kitchen counter.
  • Gather your favorite berries & slice bigger items into thin pieces. Toss the berries with the cornstarch, sugar & 1 tsp cinnamon.
  • Preheat the oven to 400° & line a baking tray with parchment paper.
  • Remove the puff pastry from the refrigerator. Unfold & roll out until it is smooth & thinned out.
  • Place the berries in the center of the puff pastry, leaving a 1 inch border all the way around. Fold the border edges inward forming a rustic crust.
  • Lightly brush the pastry crust with the milk & sprinkle with the sugar spice blend.
  • Bake for 20-25 minutes until the edges are crisp & golden brown. Remove & let cool. To up the treat level, serve with a scoop of whipped cream or ice cream.

Notes

The beauty of this recipe is how quickly it comes together. All thanks to the store-bought puff pastry. Make sure to check the ingredient list as not all brands are equal (Pepperidge Farms is vegan & is widely available).
Sitting on a ton of other fruits? Use them! This recipe can be used with any of your favorite fruits. Cherry, peach, apples…you name it! I used a mix of summer berries - strawberries, blueberries, blackberries & raspberries. Go with what you have & love!
This dessert is great on its own. Light & sweet! However, if you want to take it up a notch give it a scoop of coconut whipped cream or vegan vanilla ice cream.
