Name a better combo than peanut butter & chocolate. Seriously, if there is one let me know. Peanut butter is simply great all on it’s own. And chocolate, is just perfection. Two items that are absolutely wonderful all on their own. But, together…together they form the ultimate union of delicious desires. So when the cravings hit for a sweet & salty treat there really is no other alternative. Peanut Butter & Chocolate Cookies are the way to go!

Now a chocolate chip cookie is usually my cookie of choice. Growing up (pre-vegan days) I made cookies so many times I had the recipe memorized. And I absolutely love peanut butter cookies, but have always hated having to wait two hours for the dough to chill. I wanted to try to make a cookie that used very few ingredients, obviously contained the two superstars peanut butter & chocolate, but was also gluten free. While I don’t have any sensitivities to gluten, I know that many of you do, because you ask for gluten free options quite a bit, so I figured why not try it out. Thus we have these 4 ingredient peanut butter & chocolate cookies. Just four ingredients! I also wanted to make these as a small batch recipe that was also quick, so when the craving hits you can readily make them, but aren’t sitting on dozens of cookie treats.

Now let’s talk cookie specifics. Generally, I prefer a soft, chewy cookie. I knew that based on the ingredients that this cookie was going to have a different texture. I’ll admit, I was a little concerned. Then I bit into one & felt a comforting ease. These cookies have a similar texture to a Mexican Wedding Cookie. That soft & airy texture that crumbles quickly in your mouth & melts into blissful peanut butter creaminess. It hits on a totally different level! And for a little extra, sprinkle with some sea salt for that salty, sweet combo.

Peanut Butter & Chocolate Cookies

The sweet & salty combination of peanut butter & chocolate united in delicious, vegan & gluten-free bites of joy!

Ingredients

  • 1/2 cup creamy natural peanut butter
  • 6 tbsp oat flour (see notes)
  • 2 tbsp maple syrup
  • 1/4 cup chocolate, roughly chopped

Instructions

  • Preheat oven to 350° & line a baking tray with parchment paper.
  • In a bowl add the peanut butter & maple syrup, stirring to combine well. The mixture will thicken up considerably.
  • Add in the oat flour & mix until incorporated.
  • Roughly chop the chocolate & fold into the dough.
  • Divide the dough into 6 equal pieces & roll into balls. Place balls on the baking tray leaving space between cookies. Using the tines of a fork, press down into the dough forming a cross-pattern on each cookie.
  • Bake in the oven for 13-15 minutes. Remove from oven & let cool before moving from tray.
  • Optional garnish: Sprinkle sea slat & crushed peanuts on top of each cookie.

Notes

Oat flour may not be something you have on hand.  If you have rolled oats available you can easily make some by placing the oats in a blender or food processor & pulsing until a smooth powder is created.  You may want to sift the flour prior to mixing the batter to remove any larger pieces of oat that may have remained intact.  You could also use AP flour or gluten-free AP flour if you have that available in a 1:1 ratio.  It may alter the cookie texture & baking time slightly, but should taste just as good.
More of a chocolate fan?  Feel free to add more chocolate if you prefer. Also, feel free to use chocolate chips if you don’t have a chocolate bar.  And you can leave the chips whole if you prefer to cut a step out of the process.
Let the cookies cool completely before handling.  They are light & airy & will crumble on you if you don’t let them set up.
