Peanut Butter Granola

I’m going to go out on a limb & say that this is my favorite granola. Ever! And let me tell you, I make granola at least once a month if not more. This Peanut Butter Granola is so simple to make! Plus, as a peanut butter lover, it is just a great way to get that peanut butter flavor on all your favorites. I put it on so many things! Yogurt bowls are probably my standard, but also smoothie bowls, tossed with sliced apples, ice cream & simply just snacking on it all by itself. I simply love it!

Now when making my granola I want a healthy mix of those clusters & loose pieces of oats. But the clusters, that is the money bite! The secret to the clusters is 3 key steps. Step 1, use coconut oil. There’s just a small amount but it really helps to firm everything up. Step 2, press that granola mixture firmly onto your baking sheet. Step 3, don’t touch it! This one is huge! Do not touch it until it has completely cooled off. You want it to form one major chunk. Once it does, then & only then should you break it into smaller chunks. It’s hard not to mess with it I know & it is going to look like it won’t set, but I promise once it cools completely it will!

Peanut Butter Granola

The best granola I've ever made! Just 5 ingredients away from the perfect topping for your breakfast treats or simply snack!

Ingredients

  • 2 cups rolled oats
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/3 cup creamy peanut butter (natural pb works best)
  • 1 tbsp coconut oil, melted
  • 3 tbsp maple syrup

Instructions

  • Preheat oven to 300° & line a large baking tray with parchment paper.
  • In a large mixing bowl combine all the ingredients, mixing well to ensure it is well combined.
  • Spread out the mixture on the baking tray & press down firmly into the tray to ensure a nice flat, even layer. Place in oven & bake for 25-30 minutes until lightly browned. Do not toss/mix while cooking, however if your oven heats uneven you may need to rotate the tray halfway through to ensure even cooking. Remove from the oven & let it cool completely. Do not touch if you want large clusters of granola.
  • Once completely cooled break up the granola into large chunks & store in an airtight container for 1-2 weeks. Serve atop your favorites or snack on its own.

Notes

When choosing your oats, make sure to pick rolled oats (or Old-fashioned as they are often labeled). They will provide the best texture & cooking time.
If possible a creamy, natural peanut butter works best. You can use other types of peanut butter but you may want to melt it with the coconut oil so that you get a runny consistency that allows you to optimally mix the ingredients together.
If you didn’t already note from the blog & recipe card instructions I will say it here again. Do not touch the granola until it has completely cooled. It needs to harden in one large chunk in order for you to then break it up into clusters. It can only do that if it is left undisturbed to firm up & become magical. I promise it’s worth it!
Use this granola to top your favorite breakfast items like yogurt, smoothie bowls, pancakes or waffles, fresh fruit or simply snack all on its own. If you are a fan of peanut butter cups, topping the granola on top of a chocolate ice cream works great too, just saying!
