Pumpkin Spice Waffles

These beauties taste even sweeter than usual. Not because of added sugars, but because they are a celebratory meal for the official launch of this website! I’ve thought about doing a website for years. I mean everyone seems to have one right. I just always thought, who am I, why would anyone care, does the world really need one more food website? You know all the self-doubt questions on might have. Turns out, I still don’t have the answers to any of those questions, but maybe I just don’t care anymore. So what if there is one more food website. I’m not sure if anyone will care, but I have built a core group of people that follow me on social media that seem to like the recipes I make so maybe it’s for them. Or maybe, just maybe it’s truly for me. Who that girls is I’m never 100% sure. Here’s to finding out!

Pumpkin Spice Waffles

A sweet & savory fall treat for a special weekend brunch or just a weekday treat!

Ingredients

  • 1 1/2 cup non-dairy milk
  • 1/3 cup pumpkin puree
  • 2 tsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp melted vegan butter
  • 1 tbsp vanilla extract
  • 2 cups flour
  • 1 tbsp baking powder
  • 1 tbsp pumpkin pie spice
  • 1 pinch salt
  • favorite waffles toppings

Instructions

  • Heat your waffle maker, following manufacturer guidelines.
  • In a bowl, mix together the milk & apple cider vinegar. Set aside for a few minutes.
  • Add the remaining ingredients to the bowl & mix well.
  • Ladle a scoop onto the waffle maker, close the lid & let cook for 3-5 minutes or until it is no longer releasing steam.
  • Serve topped with your favorite items!

Notes

Any leftovers? Place in a storage bag & put in the freezer. When you are ready to reheat just pop in the toaster. Quick & easy!
Every waffle maker is slightly different. I do not need to use a cooking spray as it is pretty non-stick, but if you need to, give the waffle maker a light spray before each waffle is made.
