These beauties taste even sweeter than usual. Not because of added sugars, but because they are a celebratory meal for the official launch of this website! I’ve thought about doing a website for years. I mean everyone seems to have one right. I just always thought, who am I, why would anyone care, does the world really need one more food website? You know all the self-doubt questions on might have. Turns out, I still don’t have the answers to any of those questions, but maybe I just don’t care anymore. So what if there is one more food website. I’m not sure if anyone will care, but I have built a core group of people that follow me on social media that seem to like the recipes I make so maybe it’s for them. Or maybe, just maybe it’s truly for me. Who that girls is I’m never 100% sure. Here’s to finding out!

Pumpkin Spice Waffles
Ingredients
- 1 1/2 cup non-dairy milk
- 1/3 cup pumpkin puree
- 2 tsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tbsp melted vegan butter
- 1 tbsp vanilla extract
- 2 cups flour
- 1 tbsp baking powder
- 1 tbsp pumpkin pie spice
- 1 pinch salt
- favorite waffles toppings
Instructions
- Heat your waffle maker, following manufacturer guidelines.
- In a bowl, mix together the milk & apple cider vinegar. Set aside for a few minutes.
- Add the remaining ingredients to the bowl & mix well.
- Ladle a scoop onto the waffle maker, close the lid & let cook for 3-5 minutes or until it is no longer releasing steam.
- Serve topped with your favorite items!
