Tahini Chocolate Sea Salt Cookies

A little sweet, a little salty, soft, chewy & utterly addictive. Tahini? In a cookie? Absolutely! Tahini is much more than an ingredient in hummus. If you haven’t started to incorporate tahini into your life, do so now with these delectable treats. It is seriously everything!

Tahini Chocolate Sea Salt Cookies

A little sweet, a little salty, soft, chewy & utterly addictive cookies to satiate those sweet cravings!

Ingredients

  • 1 cup sugar coconut sugar or cane sugar
  • 1 cup creamy tahini
  • 1/2 tbsp vanilla
  • 1 cup oat flour see notes
  • 1 tsp baking soda
  • 1 pinch salt
  • 1/4 cup cold water
  • 1/2 cup chocolate chips or bar (chopped)
  • sea salt optional sprinkle to garnish

Instructions

  • In a bowl, cream together sugar, tahini & vanilla.
  • Add in all the dry ingredients, stirring to combine.
  • Add the cold water (make sure it is cold), stirring until well combined.
  • Add in the chocolate.
  • Place in the freezer for 10 minutes to firm up.
  • Preheat oven to 350°. Line a baking tray with parchment paper.
  • Scoop out dough into tight mounds on the baking tray.
  • Bake for 10 minutes. Remove from oven & give the tray a gentle tap on your counter to get those desired ripples of chewiness. Return to the oven & bake for an additional minute or two, watching closely.
  • Remove from the oven to let cool. Sprinkle each cookie with a pinch of sea salt.

Notes

So let’s chat for a minute. Tahini & chocolate can be pricy ingredients. You know what else is…oat flour. You can buy it in a bag, ready to go & I’m not knocking that, you do you. However, if you want to save a bit of money & have one extra minute, do yourself a favor & make your own. Simply place rolled oats in a blender or food processor and blend until it forms a fine, flour consistency. So simple!
If you are a chocolate fanatic feel free to add more chocolate or even melt some chocolate with a bit of coconut oil & drizzle over the top.
Let these cookies cool for a few minutes so they can firm up, but I won’t judge if you consume immediately & often.
