It has now been 5 straight days of early morning thunderstorms that are dark, stormy and very dreary. As a result, I feel like I am more tired than ever! Vanilla Latte Protein Bites to the rescue!!! These delicious, little bites combine the flavors of your favorite morning vanilla latte with protein powder to fuel you throughout the day. They are so simple and easy to make, you’ll be enjoying them in under 15 minutes and able to tackle the day with ease. Well, maybe not ease but at least with a boost of energy. I mean I don’t know what your day looks like, you may have a super difficult and demanding day. You got this!

This recipe for Vanilla Latte Protein Bites comes together so fast! Hopefully, you already have a protein powder at home, as it’s a key ingredient. There are are so many plant-based protein powders on the market now and they should all work perfectly for this recipe. They will however vary in their level of sweetness and vanilla flavoring. And odds are our coffee orders probably vary a bit. I’m more cream than sugar. You may be the opposite. The great news is this recipe will give you a solid foundation to work with and then you can alter with a little more or less sweetener, vanilla or coffee as needed.

You're favorite morning latte in a quick easy energy bite!

Ingredients

  • 1/4 cup vegan vanilla protein powder (plus additional 1 tbsp for garnish)
  • 2/3 cup coconut flour
  • 1/4 cup almonds
  • 1/3 cup creamy almond butter sub cashew butter
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 1 tbsp instant coffee (reserve additional for garnish) (about a single serve packet)

Instructions

  • Add all the ingredients to a food processor, reserving the additional instant coffee and protein powder for garnish.
  • Pulse for about 30 seconds to 1 minute until the dough combines & starts to form a tight ball when pressed.
  • Remove the blade from the food processor & scoop some dough into your hand packing it tightly until it forms a ball. Gently roll the dough between your hands until it forms the perfect size & shape. Repeat until now dough remains.
  • For additional garnish, roll the balls in an additional scoop of vanilla protein powder to coat & sprinkle with a pinch of instant coffee.

Notes

Protein Powder:  Any protein powder should work just fine but they do vary in the amount of sweetness & flavor.  Alter with a little more or less of the maple syrup or vanilla extract as needed.  Feel free to use a plain protein powder as well & just up the amount of flavorings.
Nut Butter:  The creamier the better.  This recipe uses almond butter but you could also substitute with cashew butter.  Peanut Butter would work, but it will change the flavor profile as the peanut taste will overpower a bit.  Not a bad thing, just want you to be aware.
Instant Coffee:  I use the single serve instant coffee packs from Starbucks.  In a pinch you could use regular coffee grounds or espresso powder if you have that.  You may just have to alter the amount a bit to get your desired flavor.
Storage:  Store in an air-tight container in the refrigerator for up to a week.  You can also freeze & then let thaw a bit before consuming.
Taste Test:  We all take our coffee differently, so feel free to test the dough prior to rolling each bite.  Add more sweetener, vanilla or coffee as needed to get the perfect latte flavoring.
