Whipped Feta with Roasted Tomatoes

Let’s check in… whipped feta, yay or nay? But J.J. it’s not vegan. Oh, but it is! And then if I told you it was whipped with honey? Again J.J., not vegan. Oh, it is! It very much is! Creamy, tangy, a little bit sweet & then paired with roasted herbed tomatoes on a garlic crostini. Seriously, you need to make this! Whether you make it as an appetizer, add it to a snack board, or simply eat it as your dinner (don’t judge me) you will love it!

So there is a restaurant in Charleston, Butcher & Bee, that makes a whipped feta. Everyone orders it! Everyone raves about it! I take their word that it is amazing (I mean all behavior certainly indicates I should) . Sadly, since it is not vegan I just devour all their other options & jealously conspire to make my own version vegan. Well, that jealousy has finally paid off!

There are so many ways you could top this feta. You could toast some nuts & seeds, serve with sliced fruits, roast some other sweet veggies like butternut squash or sweet potato. Have fun, mix it up!

Vegan Whipped Feta with Roasted Tomatoes

The perfect appetizer, snack board addition, or even a simple snack turned dinner. However you choose, I guarantee you'll be licking the bowl clean.

Ingredients

  • 6 oz vegan feta (Violife makes a 12oz block, halve it)
  • 2 tbsp olive oil plus drizzle on tomatoes & bread
  • 2 tbsp water
  • 1 tbsp vegan honey
  • 1 1/2 cups grape or cherry tomatoes, halved
  • 1 tsp dried oregano
  • 1 sourdough baguette (as many slices as needed)
  • 1 clove garlic

Instructions

  • Preheat oven to 375°. Line a baking tray with parchment paper.
  • Slice the tomatoes in half. Place on baking tray. Drizzle with oil & season with oregano. Toss well & place with cut side down. Roast in oven for 30 minutes.
  • While tomatoes roast, whip the feta by placing in a food processor, mixer or use a handheld mixer. Add the water, oil & honey until it is a smooth creamy consistency. You may need to stop to scrape down the sides. Add a bit of water as needed to reach your desired consistency.
  • Slice the baguette. Place on a baking tray & drizzle with a bit of olive oil. Place in the oven with the tomatoes for the last 10 minutes of cooking.
  • Remove items from oven. Unpeel the garlic clove & gently rub on the top of each slice of bread just to infuse a bit of flavor.
  • Plate the whipped feta, spoon over the tomatoes & serve the crostini on the side for dipping. Garnish with a drizzle of olive oil & some cracked pepper.

Notes

Violife makes a feta cheese in a 12oz size. I just slice it in half & blend away.
Didn’t know there was vegan honey? My favorite was an apple honey, but sadly that company no longer exists. However, there are options on Etsy or Pyure Organics makes one that can be found in many stores or on Amazon. The honey isn’t required, but HIGHLY recommended!
Want to try other toppings? Add some roasted nuts & seeds. Serve with fruit slices for dipping. Add it to a snack board as one of the cheese options. Top with some sweet roasted veggies like butternut squash or sweet potato.
