Mango Star Smoothie
Brighten your mornings with this colorful & tasty Mango Star Smoothie packed with vitamin C to get your day off to a great start!

- 1/2 cup frozen mango
- 1 frozen banana
- 1 starfruit
- 2-3 florets frozen cauliflower
- 1/2 tsp turmeric
- 1/2 cup ice
- splash of water to reach desired consistency
Prepare the starfruit by trimming, cut into star shaped slices & remove seeds. Reserve a slice for garnish.
Add all the ingredients to a blender. Blend on high for 1-2 minutes until smooth, adding more liquid as needed to reach preferred consistency.
Serve with a garnish of starfruit & any other preferred toppings.
Starfruit, or Carambola, can be eaten whole minus the seeds. While this is the case, the ends & spine of each "star point" can be a little tough so I trim then down. Simply slice of each end & then run a knife down the length of each spine to remove the spine. Then cut into star shaped slices & remove the seeds in the center of each star.
Sneaking in added cauliflower to smoothies is a great way to boost fiber content. I always keep frozen, cooked spinach on hand for just this reason. Either buy the frozen bags in your store or you can buy a head of cauliflower & steam the florets then store in a freezer safe container & just pop in a a couple of florets to your smoothies.
