Mornings can be rough! So many tough decisions need to be made. Like which toppings do I put on my smoothie bowl? How many can I add before the bowl overflows? Will I get brainfreeze? Tough I tell you!

So let’s make it easy with this breakfast in bed Acai Smoothie Bowl Bar!

Acai Smoothie Bowl

Sunday Funday just got better with this breakfast in bed Acai Smoothie Bowl Bar.

Ingredients

  • 2 packets frozen acai puree
  • 1 cup frozen banana
  • 1/2 cup frozen cauliflower
  • 1 tsp vanilla or coconut extract optional
  • 1/2-1 cup water sub dairy-free milk if you prefer
  • all your favorite toppings - strawberries, blueberries, blackberries, nuts, granola, coconut, banana, cacao nibs, nut butter…go wild

Instructions

  • Prepare your topping selections, slicing & dicing as needed. Place in individual bowls for serving.
  • Add the frozen smoothie ingredients to a blender & half of the water. Blend until combined, adding more water as needed for desired consistency. Pour into serving bowls.
  • Place the acai bowls, toppings & a coffee on a breakfast tray & climb back under those covers.

Notes

Now this doesn’t have to be eaten in bed, but I find the breakfast in bed just taste better. Maybe it’s just me.
This would also be great for a brunch get-together with the girls, a Mother’s Day treat, post run family breakfast buffet style.
