Apple Cider Donuts

The old adage, an apple a day, is certainly being put to the test for me this fall. I am on apple overload! How about you? This is not a complaint in the least, as I absolutely adore all things fall! In fact, I’ve even considered moving to Boston just so I can truly experience a changing of the season. To be clear though, I also adore all things Boston regardless of the fall season & would move there in heartbeat. I digress.

One of the first welcoming signs of fall is that first appearance of apple cider donuts on my Instagram feed. You know what I speak of. That one week where it seems like everyone is going apple picking. Where they find a farmstand on the side of some cute country road & indulge in a sugar spice filled bite while washing it down with some warm apple cider. Even if they are doing it strictly for the ‘gram, I am here for it, I am jealous of it & I covet it! Since where I live does not really have that crisp fall September whether change (it’s currently 86 degrees & humid), not to mention nary an apple orchard in sight, I must do the best I can to recreate these fall feels. In doing so, I have made these oh so delectable donuts, a Cinnamon Apple Latte, cranked my A/C up so that I can curl under a warm furry (faux of course) blanket & blissfully smiling over all things fall!

Apple Cider Donuts

That delectable sugar spice breakfast treat to welcome in the fall!

Ingredients

  • 2 cups All-Purpose flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1/2-1 tbsp cinnamon see notes
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/2 cup cane sugar
  • 1/4 cup melted vegan butter
  • 1 1/4 cup apple cider
  • 1/3 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar

Sugar Spice Topping

  • coconut oil spray sub melted coconut oil or vegan butter
  • 1 tbsp cinnamon
  • 1/2 cup cane sugar

Instructions

  • Preheat oven to 375°. Grab your donut mold & lightly spray with coconut oil. If you don't have spray melt vegan butter or coconut oil & gently brush on.
  • In a bowl mix all the dry ingredients together.
  • In another bowl mix the remaining wet ingredients together.
  • Slowly add the dry ingredients to the wet until just mixed. Be sure not to overmix the batter, you want that nice fluffiness that comes from the just blended baking soda & acv.
  • Fill your donut mold with the batter 3/4 of the way in height. See notes.
  • Bake for 8-10 minutes.
  • Remove from oven & let the donuts cool for a few minutes.
  • If adding the sugar spice topping, combine the sugar & spice in a bowl. Working one donut at a time, lightly spray or brush on the coconut oil then place the donut in the bowl & gently spoon the sugar mixture all over the donut to coat. Shake of the excess & repeat the process for each donut.

Notes

I love cinnamon, so in the ingredients you will see “1/2-1 tbsp cinnamon”. If you want that extra warm spice go full tbsp, if not 1/2 tsp does the trick.
To fill your donut mold you have a few options. You can fill a pastry bag with the batter & pipe it in the rounds. Something to know about me…I hate doing dishes. I mean I loathe them! So one more thing to clean is not my thing. You can fill a plastic storage bag, snip of the end & pipe. But, I am reducing my plastic usage so this does not work either. Instead I just spoon the batter into the mold until it forms all the way around. It may take an extra few minutes but no added dishes & a big yes for the environment.
Traditional apple cider donuts will have the sugar spice coating all the way around. I wanted to limit my sugar intake (as I will most likely be eating a dozen donuts in the coming days) so I only coated the tops. You do you!
If you don’t have a donut mold you could make these into muffins, just increase the cooking time.
