Toasted Hazelnut Chocolate Pudding

The power of chocolate is real! I mean it’s loaded with antioxidants, has been linked to reducing heart disease risks, increasing brain function, and just tastes delicious. This recipe has only 4 ingredients & is so simple to make. The hardest part will be waiting for it to be ready!

Toasted Hazelnut Chocolate Pudding

Ingredients

  • 2 cups non-dairy milk of choice
  • 1 cup pitted medjool dates (about 12-15 dates)
  • 1/4 tsp hazelnut extract or strong flavored coffee see notes
  • 8 oz chocolate preferably dark
  • chopped toasted hazelnuts optional garnish

Instructions

  • In a blender or food processor, puree the first three ingredients until well combined, about 3 minutes.
  • Melt the chocolate by placing in the microwave in 30 second intervals, stirring well.
  • Add the chocolate to the pudding mixture and continue to blend until a pudding consistency develops, about another 3 minutes.
  • Pour the mixture evenly into desired containers.
  • Place in the refrigerator & let them sit for at least 4 hours until they firm up.
  • Remove from the refrigerator & top with chopped toasted hazelnuts or garnish.

Notes

Not a fan of hazelnut? Not a problem! Just omit & you are left with an amazing chocolate pudding.
If you are using hazelnut, the extract will give you a stronger flavor but that may not be a pantry staple. Instead, brew a really strong hazelnut coffee & use in place of the extract.
While this recipe has no added sugar, it is naturally sweet due to the dates. To balance that out, dark chocolate is preferred. If all you have is semi-sweet you can use, just know that it ups the sweet factor.
For added fun, top with your favorite toppings. I toasted some chopped hazelnuts (place hazelnuts in the oven for a few minutes at 350 until they just begin to darken & get crispy) and cacao nibs. You could also add whipped cream, shaved chocolate, crushed cookies or your favorite topping.
